Fermentation is achieved using active dry yeasts and the temperature is controlled at 16ºC to 18ºC

Combining the sweetness of the Yamadanishiki rice grain with one of the most uniquely full flavour ranges it balances greater strength with a robust and fruity finish. An elegant aroma with subtle notes of honey and white spring flowers. This Daiginjo offers a fruity and floral palate with delicate aromas of pear, as well as notes of aniseed to accompany a dry finish.
