NV Benedicte et Stephane Tissot Cremant du Jura Indigene $51-100 Organically Farmed and culminating with a finish50% Chardonnay, 40% Pinot Noir, 5% Poulard, and 5% Trousseau, aged in barrel, with the secondary fermentation started with the domaine's grape must. All natural yeasts. Zero dosage. Disgorged October 2025. The Indigene is always a bit more toasty yeasty and briochy than his other cuves, not unlike an excellent vintage Bollinger. Always one of the most complex Crmants in the Tissot range. Also available in magnums
