"As a sorcery" is "as a sorcery" (covered in #20), so: "Saddle only as a sorcery" is "saddle only as a sorcery." To put it simply, it means "saddle can only be activated at sorcery speed." In summary, "Tap any number of other creatures you control with total power 3 or more: This Mount becomes saddled until end of turn
